Tiger Lily Peppers® Sweet and Mild Savoury Rice
Ingredients
(Serves 4)
- 40g Sweet and Mild Tiger Lily Peppers®
- 25g chopped onion
- 25g chopped bell peppers
- 50g peas
- 1 clove garlic
- 50g mushrooms
- 150g Long grain rice
- 550ml Boiling water
- 40g butter – 15g for frying and 25g for when you rest the rice dish
- Stock cube – vegetable or chicken
- A flavour – perhaps saffron powder, or curry powder or turmeric, or just eat plain
METHOD

Fry off the onions, bell peppers, garlic and mushrooms until soft

Add the rice and stir for a few minutes. If using a flavour, add now

Mix the stock cube with the boiling water

Add to the rice and boil for 5 minutes, then reduce down to. A simmer for a further 10 to 15 minutes or until rice is tender

Stir in the peas and Sweet and Mild Tiger Lily Peppers® , add the butter in knobs on top of the rice, cover and leave to stand for 5 to 10 minutes.

Serve on its own or with crusty bread, meat or fish
