Tiger Lily Peppers® Sweet and Mild Savoury Rice

(Serves 4)
  • 40g Sweet and Mild Tiger Lily Peppers®
  • 25g chopped onion
  • 25g chopped bell peppers
  • 50g peas
  • 1 clove garlic
  • 50g mushrooms
  • 150g Long grain rice
  • 550ml Boiling water
  • 40g butter – 15g for frying and 25g for when you rest the rice dish
  • Stock cube – vegetable or chicken
  • A flavour – perhaps saffron powder, or curry powder or turmeric, or just eat plain
  1. Fry off the onions, bell peppers, garlic and mushrooms until soft
  2. Add the rice and stir for a few minutes. If using a flavour, add now
  3. Mix the stock cube with the boiling water
  4. Add to the rice and boil for 5 minutes, then reduce down to. A simmer for a further 10 to 15 minutes or until rice is tender
  5. Stir in the peas and Sweet and Mild Tiger Lily Peppers® , add the butter in knobs on top of the rice, cover and leave to stand for 5 to 10 minutes.
  6. Serve on its own or with crusty bread, meat or fish
